But... there is one food that has haunted my dreams for years! I've tried it raw, sauteed, roasted, pickled, red and golden... in a soup, in a stew... in a risotto and even a cookie! But I've never been able to, or had anyone else be able to, prepare this food in a way that's palatable for me! It's the smell, the texture... ekkkk... just thinking about it gets me! Yes, everyone... it's the infamous B-E-E-T!!
During my last year working at SCAD, I gave the dining services executive chef a challenge to make me love beets! He eagerly accepted this challenge, but in spite of several heartfelt attempts, I couldn't get past the smell, flavor or texture of it-- regardless of how he prepared it!
I didn't want my aversion to this veggie to impact whether Sweet Pea would like them. So I bravely purchased a bunch of them at our local supermarket. I put on my gloves (because I didn't want to touch them), and thought of three ways to use them.
First, I roasted them-- Didn't work!
Secondly, I wanted to make a risotto from it, because cheese makes everything better right?! I couldn't even make it all the way through the preparation... much less the tasting!
Lastly, I made Sweet Beet Cookies with Sweet Pea. These cookies used grated beets to add color and sweetness to the snack. To my surprise, they were eatable and slightly enjoyable; however, as they sat, the beet flavor and smell began to permeate the Ziploc baggie they were in and I let Sweet Pea finish them off.
Would I ever enjoy this highly nutritious bulb of nature?! The answer is YES!!!! Savannah Squeeze is a new raw juice bar in Savannah. The owner, Chelsea, has come up with some amazingly flavorful and delicious variations of cold pressed juices that are yummy enough to wet your whistle!
To my surprise, they have several flavors of juices and smoothies that contain beets. As I pursed the extensive menu, I knew today was the day! After explaining my "beet issue" with the girl behind the counter, she offered me a sample of one of the newer flavors, Beet Sparkle. After bravely sipping this scarlet, nutrient-packed juice, I was hooked! Beet Sparkle it is! This sweet, scarlet juice is bursting with the bright flavors of apple, lemon, and oranges. Ginger gives it a spicy bite that adds depth. And, of course, our star-- the beet-- adds a beautiful red color and sweetness that is undeniably delicious! Yes, I've become a beet-liever! (LOL... get it?!)
So, am I a beet lover? Uhhhmmm... not quite; however, I feel great knowing that whenever I need a nutrient-packed boost from this neglected root veggie, I can head over to Savannah Squeeze for a beet-xperience like no other! (Ok... I stretched it with "beet-xperience"!)
