Since Layla-Bug was born, my biggest concern was how am I going to make time to cook breakfast everyday for myself... uh, I mean my family! :) I'm usually pretty good at planning my meals for the week, but I knew I could plan all I wanted to but when I'd been up all night, the last thing I'd want to do is stand in front of a stove! Well, really, the last thing I'd want to do is fall asleep only to have, minutes later, Sweet Pea jump in bed with me asking for breakfast.
My solution... cook breakfast at night and enjoy it in the morning! Here's my system: I prep my breakfast at night either while I'm cooking dinner or after dinner. Then, around 6/6:30am, I wake up (at least partially) and pop the prepped dish in the oven while I'm either feeding Layla-Bug or pumping! Talk about multi-tasking! My husband can then make his own plate if needed before he heads out of the door to work and I can easily make a plate for Sweet Pea!
The best thing about this system is that I'll make enough for two days so I find myself making breakfast only 3-4 times a week! So, here's the breakdown
- Saturday: Cook breakfast (this is my day to try out new recipes or fix something a little more time consuming)/Evening: Prep Sunday breakfast
- Sunday: Eat prepped meal
- Monday: Leftovers/Evening: Prep Tuesday breakfast
- Tuesday: Eat prepped meal
- Wednesday: Leftovers/Evening: Prep Thursday breakfast
- Thursday: Eat prepped meal
- Friday: Leftovers

Baked Pancakes (Six Sisters Stuff)- We add blueberries or diced strawberries and enjoy with homemade syrup (recipe coming soon) or maple syrup.
Baked Oatmeal (AllRecipes.com)- I love adding blueberries, raisins or diced apples to the base recipe.
Vegetable-Cheddar Quiche (Pillsbury.com)-- I use fresh vegetables and switch them up based on what we're in the mood for.
