I mean, I'm used to Sweet Pea being hungry and wanting snacks during the day, but I think these half-day camps wore him out! The result, a starving, ravenous youngster who would eat my hand if I remembered to put ketchup in my bag to go with it!
So began my quest to find a sustainable granola bar. Now, when I say sustainable, I'm not talking about environmentally sustainable... I mean something that is able to sustain Sweet Pea's super high metabolism! I have a fantastic Trail Mix Bar that we frequently keep on hand, as well as a great Honey Granola recipe that is a staple in our house. Neither of those, however, were quite what I was looking for. Then I found the Playgroup Granola Bars. These remind me of the Plum brand granola/oat bars that you purchase in the store... but they are way better!
These chewy, hearty bars are great for after camp/school snacks! They hold up well and are great to throw in your diaper bag or pocketbook for an on-the-go snack! They are great for potlucks and, as the name implies, playgroups as well!
You can customize this base recipe to your liking with your choice of dried fruit, nuts and/or seeds. I like to switch up the flavor at times and use coconut oil instead of olive oil for just a hint of something different. You could also add mini chocolate chips or shredded coconut for a different flair as well! The original recipe is a good base; however, you know I had to Tummy Time it by swapping out the all purpose flour for whole wheat flour, the brown sugar for raw sugar, and the canola oil for olive (or coconut) oil. Another adjustment, you could decrease the amount of honey in the recipe to 1/4 cup instead of the listed 1/2 cup without decreasing the sweetness..
